Nothing unites people quite like food. To celebrate the black men and women who are using food to connect cultures and communities, we’re sharing some of our favorite recipes from chefs, at-home cooks, and food lovers who know that great flavors can bring us all together. Akudo Agokei (@rad_economist) is a self-taught chef from Nigeria who now resides in the UK, and here he shares a delicious breakfast recipe that you can make in minutes. 

 

WHAT YOU’LL NEED

3 eggs
1 tomato [diced]…or 2
30g Spinach
½ onion [sliced and diced]
Salt
2 maggi Bouillon cubes

Black pepper
Vegetable oil

INSTRUCTIONS

 

1). In a hot oil, fry your onions, tomato(es) for a minute and a half, on high heat, while stirring.
2). Add in your bouillon cubes, and a pinch of salt and pepper.
3). Crack your eggs. Beat it, and toss in…and….SCRAMBLE!!!
4). Add Spinach. Add the spinach after the eggs start looking cooked, because you don’t want to overcook the eggs and let them become too dry, and you don’t want to overcook the spinach too, only needs a minute.
5). Enjoy with toast, or fried yams, or plantains!
