Travel Noire Eats And Recipes: Nigerian Plantain Waffles

To celebrate the black men and women who are using food to connect cultures and communities, we’re sharing some of our favorite recipes from chefs, at-home cooks, and food lovers who know that great flavors can bring us all together. Akudo Agokei (@rad_economist) is a self-taught chef from Nigeria who now resides in the UK, and here he shares one of his simple and quick recipes for vegan, Nigerian plantain waffles.
WHAT YOU’LL NEED
- 1 really ripe plantain
- 1 1/4 cup soy milk
- 3 tbsp. sugar
- 2 cups self-raising flour
- 2 tsp. vanilla extract
- ½ tsp cinnamon & nutmeg
- Pinch of salt

1). Blend. Put everything except the flour into a bowl and blend.
2). After blending, sieve in your self-raising flour. You want a thick mixture, a really
thick mixture, but not too thick.
3). Try one out. Brush some melted butter onto your waffle maker and make a waffle. If it is too thick, add more soy milk, if it is not thick enough, add more flour.
4). Repeat the waffle process until you use all of your flour mixture.
5). Serve and enjoy with your favorite vegan sauce or syrup. For an extra pack of
flavors, consider adding grilled apples tossed in cinnamon, brown sugar and butter.
6). Add lemon slices/wedge [optional].
