Nothing brings cultures together quite like food. To celebrate the black men and women who are using food and flavors to connect cultures and communities, we’re sharing some of our favorite recipes from professional chefs, at-home cooks and foodies who know that great flavors can bring us all together. Temitayo Ola (@tayoscreation) of Dinner with Tayo shows us how to make one of his favorite recipes for Sweet Plantain Rice with Pan-fried Chicken. WHAT YOU’LL NEED

 

1 very ripe sweet plantain

oil for frying

2 cups of rice

2 ½ cups of water

salt to taste

½ tablespoon canola oil

handful chopped cilantro

thin sliced chicken breast

black pepper

INSTRUCTIONS

 

1). Peel plantain and cut it into small cubes.

 

2).Fry them on a skillet on medium-high heat. (a thin layer of oil will do fine, no need to deep fry them). Turn plantain cubes and keep cooking them until they are golden brown all over on the outside and when they are extra tender when biting into a piece.

 

3). Once ready, set them aside.

 

4). To cook the rice, in a medium saucepan bring to a boil the water, oil and salt to taste.

 

5). Once the water is boiling, add rice, stir, cover and bring heat down to low.

 

6). Let it cook for 15 minutes. After 15 minutes have passed, uncover rice, stir and add chopped cilantro and sweet plantain cubes. Cover again and let it cook for 15 minutes more, on low heat.

 

For chicken

 

1). Season on both sides with salt and black pepper.

 

2). In skillet, pan fry on both sides for 10 minutes or until chicken is tender and cooked through.

 

3). Serve alongside with sweet plantain rice.
