Travel Noire Eats And Recipes: Nigerian Baked Sweet Potato With Salmon

Temitayo Ola (@tayoscreation) of Dinner with Tayo is back with another one of his delicious and simple recipes and today he’ll show you how to make Nigerian Baked Stuffed Sweet Potatoes with Spinach Salmon Sauce.
WHAT YOU’LL NEED
2 sweet potatoes
1 bag of spinach chopped
1 red bell pepper
1 large red onion
2 cloves of garlic
1/4 cup palm oil/ annatto oil
1 cube or 1 Tbs chicken flavor bouillon (Brand: Knorr)
1). Preheat oven to 425°F. Scrub and pierce potatoes with a fork and place on a microwave-safe plate.
2). Microwave, uncovered, on high 12-14 minutes or until tender, turning once.
3). Cool, cut each potato lengthwise in half. Scoop out pulp, leaving 1/4inch thick shells.
4). Place potatoes in a baking pan. And bake for 8-10 minutes until tender.
5). Finely cut up the tomatoes, onions, red bell peppers and spinach and set aside.
6). In a large pan, heat up ¼ cup of oil. Cut up salmon into pieces and cook.
7). Add in tomatoes, onions, pepper and spinach. Add in seasoning and stare up.
8). Cook for about 10-12 minutes on medium-high heat.
Once ready, remove the potatoes from the oven, allow to cool down. Add sauce into the potatoes, serve and enjoy.
