Travel Noire Eats And Recipes: Caramelized Naan And Plantains
Nothing unites people quite like food. To celebrate the black men and women who are using food to connect cultures and communities, we’re sharing some of our favorite recipes from chefs, at-home cooks, and food lovers who know that great flavors can bring us all together. Akudo Agokei (@rad_economist) is a self-taught chef from Nigeria who now resides in the UK, and here he shares one of his recipes for caramelized naan with plantains.
WHAT YOU’LL NEED
1 ripe yellow Plantain
1 Naan bread
1 tomato [diced] Handful of spinach
1 egg yolk
1 tbsp. butter
Chili pepper [optional] 1 tbsp. Coconut oil
½ tbsp. cinnamon
30ml honey/Agave syrup
Garlic and ginger powder
1). Cut your plantain and fry. I assume you will know how to cut plantain diagonally into slices and fry in vegetable oil. If not, just do you, honestly can’t go wrong with plantain.
2). Slice up your shallots, and tomatoes and spinach, sauté in oil, season with pinch of salt, black pepper, chili pepper, and a pinch of ginger and garlic powder for extra flavor.
3). Cut your Naan bread into 2 rectangular shapes if you want, or caramelize the entire naan because you are the boss of you and only God can judge.
4). Now Caramelize your naan. Put your coconut oil into a skillet/frying pan, and let it melt, add the cinnamon and honey/agave. Stir quickly and then toss your naan bread in. fry on each side for a minute the flip, moving around the pan to absorb all of the coconut and cinnamon goodness.
5). Now for our egg sauce. Put 2 egg yolks into a small bowl, add salt and pepper, and pinch of ginger powder, melt your butter, and while still hot, add into the egg yolks, continuous mixing as you pour in the hot butter.
6). Now just assemble what you have, starting with your caramelized naan bread, then your sautéed vegetables, then plantains, then drizzle your egg sauce on top.
7). Eat as is, or top with some of your favorites; mushrooms, crispy onions, whatever really, but as it is right now is simply delicious, so enjoy.
